Meet Amy Corliss

Proprietress & Pastry Chef

Amy is the lead talent in the kitchen and the driving force at the Little Bird.

Her love for baking stems from eating her grandmother's homemade cookies and quick breads, and grew into baking loaves of honey wheat bread with the help of her mom, Chris, and selling them door to door in her neighborhood as a child. From there she moved on to providing her classmates in high school with brownies and cookies. Once she realized she could actually make a career out of creating treats with love and feeding people, she decided to enroll in baking and pastry school.

In 2005 she received her diploma in Baking and Pastry Arts from the Pacific Institute of Culinary Art in Vancouver, British Columbia. Her professional experience includes baking at Spruce Confections in Boulder, working in the pastry kitchen at Tom Colicchio's restaurant Craft in New York City, and growing from part time pastry assistant to pastry chef at The Chocolate Room in Brooklyn, NY. Amy is always trying new recipes, tweaking old ones, and on the quest to bring more delicious treats to the people of Ft. Collins!
